Terroir
The CHINON Blanc represents only 2% of the whole CHINON production, namely only 40 hectares. Chalky clay or clay-with-flints soils are the best "terroirs".
Vines
The CHINON Blanc is only vinified with the grape variety CHENIN, also called Pineau de Loire. The limit yields are 55 hectoliters per hectare.
Vinification
The grapes are picked when they are well matured and immediately pressed. After a strong racking the must is vinified at low temperature fermentation in stainless steel vats.
Aging
In order to obtain fat in the wine and intense aromas, the wine is aged on lees for a few months.
Tasting notes
Attractive nose of citrus fruits, white-flesh fruits and flowers. The palate is fresh.
Service temperature: 10/12°C.
Serve as an aperitif or match with a fish pie or sweet dessert.
